The Destino 2004 Napa Valley Cabernet Sauvignon is a multi-layered wine
with big forward fruit. It dances with layers of black cherry, chocolate, and red
currants. The tannins are relatively soft and the wine is ready to drink now but
will age for years.
The Napa Valley Cabernet Sauvignon comes from three separate blocks. One is
Maher Vineyard, on a steep slope north of St. Helena on the east side of Napa
Valley. The other two are at Stagecoach Vineyard on Atlas peak. The clones of
Cabernet are #337, 4 and 8. The combination gives multi-layered complexity and
structure.
The grapes were hand harvested at 25, 26 and 27 Brix. The wine was made utilizing traditional Bordelaise techniques with three pumpovers per day, fermentation with Bordeaux red yeast, followed by an extended maceration or "cuz'aison". Aging is in 100% French oak with a mixture of wood types: Never, Center of
France, and Limousin origins. The wine is further supported by a mix of French coopers (Nadalie, Vicard, and Taransaud) employing distinctive toasting techniques.
