Destino Wines' Russian River Sauvignon Blanc comes from the beautiful Wood Vineyard located off River Road outside of Santa Rosa. Destino founder Chris Calkins discovered this vineyard gem while searching for Chardonnay fruit. The youthful, seven-year-old vines offer two vibrant clones of Sauvignon Blanc (including an enticing Musque clone). Though Destino is focused on Chardonnay and Cabernet Sauvignon, the fruit from this vineyard proved just too good to pass up, resulting in this exceptional Russian River Sauvignon Blanc.
The Sauvignon Blanc grapes from the Wood Vineyard were picked at the ideal ripeness level of 24.0 Brix. To maintain its bright, varietal character, the fruit was fermented in stainless steel tanks until almost dry, and then racked to neutral barrels. Once in barrel, the lees were stirred regularly to add richness and texture to the wine. Finally, the wine was racked back to the stainless steel and allowed to settle prior to being bottled.
